This is a modified version of this recipe at Gutsy by Nature, which includes pancetta. Darling Hubby doesn’t eat pork for religious reasons, so I don’t keep it in the house. You can imagine this limits our options even further on this AIP diet! However, I make do pretty well with turkey bacon.
I further modified the recipe by omitting the cinnamon and sage. You see, getting food on the table is an endeavor frequently involving brain farts on my part. I forgot the cinnamon and the sage! But it turned out pretty tasty and flavorful even without them. Next time I promise I’ll get it right. I love sage. And cinnamon.
