Super-Dooper Smoothie

One of the first things I figured out about transitioning to the Autoimmune Protocol was breakfast is going to be difficult.  Most mornings Dear Hubby would grab one or two hard boiled eggs and slap them on some bread on his way out the door.  I know this is what he was doing because every time I’d open his car door pieces of yolk and bread crumbs would fall out.  In my head I call him Hansel—just one of many little private jokes I keep with myself.  Does anyone else do this, or am I just crazy? (Please, don’t answer that.)

spinach-blueberry-kale-date-paleo-AIP-smoothieThe problem with breakfasts is this: DH is usually leaving for work in the mornings at EARLY times (1:00 a.m.-ish).  I am not about to get up that early to make beautiful paleo concoctions, which require effort.  So we have settled on smoothies for these first few days.  It’s a win-win because not only can I make them the night before, I can also hide extra nutrients for him.  This week he has been having a delicious blueberry-banana-green smoothie with some extra goodies tucked in (kombucha and coconut-milk yogurt).  SHHHHH! Don’t tell him that!

Super-Dooper AIP Paleo Smoothie

Ingredients:

1/2 banana
1/2 cup blueberries (fresh or frozen)
1 cup pineapple
1-2 cups baby spinach, kale, chard mix (or whatever greens you have on hand)
6-8 dates
1 cup Kombucha (I’m using a ginger-lemon flavored variety)
1/2 cup coconut milk yogurt
Distilled water

Directions:

Dump everything except the water into the blender and blend until smooth.  Add water until the smoothie reaches your desired consistency.

 Et voila! Does anyone else have an AIP-compliant smoothie recipe to share?

  1. kinda sounds like a “sugar bomb” to me. do you know the carb content? I don’t use much fruit in my smoothies I’m afraid this would spike my blood sugar horribly.

    • I haven’t calculated the carb count, Kay, but I imagine the fiber content and the fat from the coconut milk would slow down absorption into the bloodstream. I am making this smoothie mostly for my husband, who I often liken to a monkey because he likes fruit so much. 🙂 I will look up the carb count in my recipe and get back to you here in a couple of days.
